Recipe Overview
This Hungarian-inspired roasted pork recipe combines succulent pork with beautifully browned potatoes, garlic, paprika, and herbs. Everything is roasted together until the pork develops a delicious golden crust while the potatoes become tender and crispy around the edges.
Ingredients
For the Pork
- 1.2 kg pork loin or pork shoulder
- 4–5 cloves garlic, minced
- 2 tbsp Hungarian sweet paprika
- 1 tsp dried thyme
- 1 tsp dried marjoram
- 1 tsp caraway seeds
- 2 tbsp vegetable oil or lard
- 1½ tsp salt
- ½ tsp freshly ground black pepper
For the Potatoes
- 1.2 kg baby potatoes, halved or quartered
- 2 tbsp vegetable oil or melted lard
- 1 tsp Hungarian sweet paprika
- 1 tsp dried marjoram
- ½ tsp caraway seeds
- Salt and black pepper to taste
- 3 cloves garlic, lightly crushed
Optional
- Fresh parsley, chopped
- 1 small onion, sliced
- A little chicken or vegetable stock for the roasting pan
Instructions
1. Prepare the Pork
Pat the pork dry with paper towels. Rub it generously with salt, black pepper, Hungarian paprika, garlic, thyme, marjoram, caraway seeds, and oil.
For the best flavor, let the pork rest for at least 30 minutes, or refrigerate it for several hours before cooking.
2. Prepare the Potatoes
Wash the potatoes and cut them into similar-sized pieces. Toss them with oil or melted lard, paprika, marjoram, caraway seeds, salt, pepper, and crushed garlic.
3. Arrange the Roasting Pan
Preheat the oven to 190°C / 375°F.
Place the seasoned potatoes in a large roasting dish. Put the seasoned pork in the center and arrange the potatoes around it. Add sliced onion if desired.
4. Roast
Cover loosely with foil and roast for approximately 45 minutes.
Remove the foil and continue roasting for another 30–45 minutes, depending on the size and cut of the pork. Turn the potatoes occasionally so they brown evenly.
The pork should reach a safe internal temperature of 63°C / 145°F, followed by a short resting period.
5. Rest and Serve
Remove the pork from the oven and let it rest for 10–15 minutes before slicing.
Serve the tender pork with the golden roasted potatoes and spoon some of the flavorful pan juices over the top. Garnish with fresh parsley if desired.
Tips for the Best Hungarian-Style Roast Pork
- Use Hungarian sweet paprika for the characteristic color and flavor.
- Do not skip the resting time after roasting; it helps keep the pork juicy.
- Baby potatoes work especially well because their skins become wonderfully crisp.
- For a richer traditional flavor, replace the vegetable oil with lard.
- Add a little stock to the pan if the potatoes begin to brown too quickly.
Serving Suggestions
Serve this roasted pork with traditional Hungarian sides such as pickled cucumbers, sauerkraut, cucumber salad, or fresh cabbage salad. A spoonful of sour cream on the side also complements the paprika-seasoned pork beautifully.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to help retain the texture of the pork and potatoes.
